I’m a huge fan of making my own almond milk, and if your’e into this too then you know all too well how much almond meal is left over that sometimes you just don’t know what to do with. So in an attempt to make good use of my leftovers I thought to myself – how can I incorporate this into a snack that will last me all week, is nutritious, yet yummy and will satisfy my mid afternoon sweet tooth.

MUESLI SLICE!
I love muesli slices, there was a cafe across the road from my old workplace that does a killer muesli slice. Only thing is they are soo sweet I hate to think how much sugar they contain. This version is only sweetened with brown rice syrup and also contain goji berries which add a nice natural sweetness and a bucket load of antioxidants to this tasty raw snack. In terms of the other ingredients you can really get creative with what you add, the recipe below is what i used and is really just a guideline, I think as long as you have the main parts – almond meal, oats, sweetener, coconut oil – the rest you can play around with. If you like your slice to be a bit sweeter try replacing some of the seeds with chopped medjool dates, currants, figs or raisins.
